I tried this recipe with 1 cup pastry flour and 1 cup all purpose flour, and they are SO LIGHT AND TENDER!!! Just amazing!!!
I also used 1 cup frozen blueberries…placing them on top before each fold over.

Made my first batch and just when I was ready to put them in the oven I realized I had forgotten the baking powder! Second batch, with the baking powder and frozen strawberries chopped up came out beautiful and delicious! Worth the extra time and effort after my first attempt

I don’t like using the rolling pin because it can smash the dough a little bit more than intended. You can watch how I put the dough together in the video if that helps. 🙂

you know, I’m not sure if I did 5 laminations. I probably only folded it two, maybe three times for fear of overworking it. I’ll try that.
as far as rolling it, I user the rolling pin lightly to smooth it into shape without pressing on it too much. is using a rolling pin bad because it can make it too thin even when done carefully?

Hi Amy! That is disappointing to hear! I just want to make sure you aren’t rolling it out with a rolling pin? Are you doing the 5 laminations? You should end with a disc that is about an inch tall and 6 inches around. You want to be careful to not over-work it while doing the laminations. I hope this helps!

Okay, I’ve used this recipe approximately 4 times, and I love the texture, moisture, and subtle sweetness of these scones. most of all, I love that they are so easy and customizable.
however, I cannot get these scones to puff anywhere near as tall as the pictures in the recipe suggest. I made sure the butter was really cold, used a weighing scale for the measurements, checked my oven temperature, and I made sure that I rolled the dough out to be about an inch to 3/4 inch thick. They just don’t rise anymore than a 1/4. Can I get some feedback?

Same thing happened to me when I was mixing, where no dough clumped together so I added 2T of additional cream until it barely clumped. Inside wasn’t completely set after 16 minutes either. Not sure what went wrong.

I only just started making scones last month, after getting a pastry cutter for Christmas. Tried a few recipes that resulted in mediocre scones (not bad for a first effort, but not outstanding). I just gave this recipe a try yesterday, using frozen mixed berries, and the lemon glaze from your Triple Berry Scone recipe, and it made some AMAZING scones. This will be my go-to from now on!
