Yes! Just wrap them tightly in plastic wrap and store in an airtight container or freezer bag 🙂

We haven’t tried this recipe with frozen bananas, but we think they should work. Let us know how it goes!

Great recipe. Easy to follow. Went perfectly with my breakfast buffet I made for my family. I made 12 large muffins bc I’m lazy and cooked an extra minute. I’ll add a few mini choc chips or walnuts next time to change it up, not that it needs it though!

Delicious!!! Turned out beautiful! The only change. I will make next time is reducing the sugar. Much sweeter than I prefer, however I have gotten off eating sugar the past year so my taste buds have adapted to less. Still with a cup of black coffee oh my!
I had to preorder your cookbook, I’ve made 2 different recipes and both were perfect!

These turned out fantastic! I halved the recipe and added 1/4 teaspoon of Chinese five spice and 1/3 cup Walnuts and 1/4 cup dark rum soaked raisins. Wow! They are perfect. Thank you!!!

Hi there. I’m normally not a poster.
But, I most certainly have to with this one. I’ve made a lot of banana bread and muffins. But this is my Top number one banana muffins now. So yummy, so moist and so delicious. Thank you!

I’m so glad you enjoyed them so much, Courtni! I haven’t personally tried reheating these in the oven. The streusel gets soft just because the muffins are so moist. Let me know how it turns out if you try it. 🙂

Seriously the best muffin EVER!! I’m about to make them for the 4th time! Any tips or tricks on keeping the streusel from getting kind of sticky (overly moist) after day 1 or 2? I thought about doing a quick broil or reheat in the oven? I wanted to see if anyone has already troubleshot this tho! Thank you!!

I’m happy to say I did follow the directions and the muffins are delicious!!
I did rotate the pans but it didn’t make a difference.

Congratulations, this recipe is proof that with basic ingredients and minimal effort everyone can bake really good banana muffins.
My daughter dislikes very sweet baked goods so the only change I made I reduced the sugar to 160ml.

This recipe is amazing, they came out perfectly, super tasty and moist, they’ll be lucky to last the weekend. I’d never made streusel before but glad I did as it really adds that extra something. Recipe made 15 exactly, I adjusted temps for my fan forced oven, but ended up needing to bake for an extra 3 minutes at the end. Thank you 🙂

YUM!!! These are definitely the best I have made! No buttermilk so used plant based heavy cream + lemon. I added mini chocolate chips due to family preference. Also opted out of the streusel but placed a pecan on each. After tasting I am happy I opted out – they were more than sweet enough without the extra on top. Saving this as a go to for future use of browning bananas 🙂

I just made these, but doubled the recipe and added walnuts. I had trouble with the streusel in that I had to add at least an extra cup and a half of flour to get it to the right crumbly consistency and it made WAY too much, like 3-4 cups extra streusel that I didn’t end up using. I also added a bit of rolled oats and cinnamon. Apart from that the muffins look and taste great!

Great recipe and the best I’ve tried by far for using up overripe bananas. so simple to follow. light fluffy and really tasty. I reduced the sugar by 50g and they were still sweet enough for us (used white granulated as I didn’t have brown). I will most definately make this recipe again. maybe ill try some fruit or nut additions next time.
thank you

Hi Dixie! I actually have instructions on how to add nuts in the FAQ section of the post. 🙂
