In reply to Linda. I'm so glad you enjoyed it so much, Linda! The only thing I would be worried about when freezing and thawing this is the texture of the tomatoes. They typically don't hold up well to freezing and eating in a dish like this.

We love this dish! The kids are growing up though and so I’m not needing to make such large portions these days. I’m wondering if I made a bigger batch if this would freeze and thaw ok?

Thank you for this great recipe. I will cut the ingredients a bit larger and use it as a vegan salad at work. I’m always looking for a good idea for these dietary needs.
