It worked well, baked for 15.5 minutes 🙂

Hi April! I haven’t personally tried it, but I think that could work. 🙂

Planning on making these and the Brown Sugar Cinnamon pop tart cookies as part of the church’s sunrise breakfast this year. Tempted to try some with a homemade blueberry jam.

As long as it’s thick enough it should work fine. 🙂

In reply to Rob.

Another 5-star WOW cookie recipe!! These are sooo good, and like all the other recipes here, they’re so different than anything folks have ever seen.

One tiny addition we made was to add 2 drops of (vegetable-based) red food coloring to the icing. It gave the icing a really nice pink hue that worked with the whole strawberry “thing”.

We also used our recently homemade strawberry jelly as the filler.

Thanks Sam, another incredible recipe

In reply to Sarah Richards.

I did this and they turned out beautifully! I put half the cookie dough in the bottom of a glass pan, spread the filling on, then spread the rest of the dough gently over the top with my fingers. Then I baked for 30 minutes but I think it would have been done at 25 minutes as they were slightly crumbly.

Hi Rebecca! I’m not sure how they would hold their shape. 🙂

Hi Kymberly! I think the refrigerator could work. You will want to leave them in there twice as long as they may spread a little bit more, but I think it will work just fine. Enjoy! 🙂

Instead of freezing them, can they go back into the fridge (step 2 of assembly)? I don’t really have a lot of freezer space in my apartment.

Hi Rob! You can omit it, but your icing won’t firm up quite as nicely and will be a bit thinner.

Delicious! Pop Tart taste delivered!
My family thoroughly enjoyed the strawberry flavored cookies. I made sugar cinnamon filling with maple cinnamon frosting for my daughter and they are her new favorite. Thanks, Sam. As always, a keeper.

Hi Jody! Most of my recipes should be able to be halved without issue. Some of the measurements can get kind of tricky when they are halved though and how I would handle it varies from recipe to recipe so if you ever have a question about an amount before trying it I’m happy to help. 🙂
