Great recipe! First time to make it, and they came out great. Always like to add my own things, so I ended up adding honey to the crumble part and a whole egg after reading some comments. Also used a bit more strawberries (didn’t want to waste the rest and I don’t like strawberries like that) in the jam while adding more lemon juice, honey, vanilla and cinnamon. So glad when a recipe comes out good, even when I add my own thing to it. Loved this recipe and your white cake recipe!

These were delicious and a huge hit at a family dinner!!! The strawberry filling was perfectly sweet and “jammy”. The crust/crumble seemed a little dry to me, but after the bars cooled, it was perfect…so buttery and just the right amount of sweetness paired with the filling. I will DEFINITELY be making these again!!

Hi Deb! You will want to work the crust together by hand. It is a dry crumbly dough and will take a bit of work to work it together. I’m not sure how much jam you would need here. This is a fairly easy layer to make so this may be a good place to start trying. Let me know how it goes! πŸ™‚

Only have a very basic Ninja food processor -i.e. like for smoothies, small batch salsa, those types of things. I don’t think it is big enough to handle the dough. Would it work for me to cream the butter and sugars in a stand mixer, add in the egg, and then the dry ingredients? Or would it be better to cut the butter into the flour?
Also, I would plan to use seedless blackberry jam from the store in place of the strawberry filling. How much should I use? I love to make foods from scratch, but have not tackled making my own jam.

Great recipe! Turned out really well and everyone loved it. Really like that the ingredients are repeated in the directions. I did mine in a metal 9×13″ tray, and it took over 50 mins to get the top to go golden in my oven, but the bottom also browned a bit more than I probably should have done. That said, the bars are still perfectly delicious – will just consider getting a thicker baking dish, tweaking baking time (and/or using the broiler for some colour at the end if necessary). Will definitely do this recipe again!
