They should cool completely on the cookie sheet. Was your butter too warm? I would think the baking soda would be a more likely culprit than the baking soda.

Thank you for your quick response. I did measure my flour. My cookie sheets were straight from the cabinet. Should I let them cool completely on the cookie sheet or remove them after about 2-3 minutes? I let them cool completely. I will try a new container of cream of tartar next time. Maybe that is the problem?

I’m so sorry to hear this happened! Did you weigh your flour? You may have needed a touch more in the dough. Did you place the cookie dough on a hot tray? That will cause them to flatten. Did you make any substitutions?

Hi Sam,

I have made your snickerdoodles several times. They taste great, but they don’t look great. When I pull them out of the oven, they are beautiful and thick. When I let them cool on the cookie sheet, they completely flatten like Frisbee disks. What am I doing wrong?

These are fabulous! Just as advertised- soft and chewy cookies that satisfy the craving. I will note that my batter tends to be crumbly so balling up the dough takes a little extra effort. also I find when the cookies are done I need to squish them down to get them out of the ball form. Clearly I’m doing something wrong, because every recipe from Sam comes out perfect every time.. it’s why I keep coming back! They still taste great and it doesn’t stop me from using this recipe (writing this on my second try, 3 months after the first if that says ANYTHING about how good these are!)

Hi Liv! I would roll the dough balls in cinnamon sugar before refrigerating as it will stick better, but then you can bake them the next day right out of the refrigerator. They may just take an extra minute in the oven, but be sure to keep an eye on them. 🙂

I haven’t baked them yet but I mixed up the dough. The directions say it will be quite thick. Mine is actually crumbly and dry. I think I can squeeze it into dough balls for the cookies but I’m not baking them until tomorrow. Is there something I should add so it’s not crumbly?

Hi Molly! Dough that is frozen can be baked straight from frozen, but it will need several minutes longer in the oven. I recommend prepping a half-sheet of cookies and testing how long it takes to bake them before baking any additional cookies.
Note that some cookies don’t spread as well when baked from frozen. If you’re worried about this, simply thaw the dough overnight in the freezer first. If the first batch still doesn’t spread as much as you’d like, use the clean bottom of a glass to gently flatten cookies before baking.
