I made this cake for my neice who loves snickerdoodle cake. I’ve never made it before but the end product looked amazing. Unfortunatley when we cut into it we found that the texture was more like a pound cake and quite heavy. The taste was good and the frosting was amazing however I would have liked the cake to have been lighter while still moist. In my opinion, it was too dense.

I’m thinking of making your ermine frosting recipe but substituting brown sugar, like you used here, for granulated and a little bit of cinnamon to compliment this delicious cinnamon swirl cake. cake was moist but too sweet. Frosting was delicious. I’ll would bake it again. But with less sugar for the cinnamon swirl part. I just don’t care for overly sweet desserts.
