In reply to Adam.

Delicious. Followed recipe exactly except chilled crust before filling and baking. Made it with frozen blackberries the second time. My neighbor said it was the best cheesecake she’s ever tasted and I agree!

I’m so sorry to hear this happened, Jessica! What size pan did you use? Were you careful when mixing it together? If you mix it too vigorously you can whip air into the batter and cause it to puff. Did you make any other substitutions or alterations?

I’ve been looking for a raspberry cheesecake recipe for my hubs. He is having shoulder replacement surgery in 2 weeks. When I told him I found a raspberry cheesecake recipe, he just about danced around with joy! With the good shoulder that is! Thank you for creating this. For the holidays I make pumpkin cheesecake and dark chocolate cheesecake. So thank you! I had a brain fart with raspberry cheesecake recipe! 🤣🤣

Hi Heather! I’m sorry to hear this happened. Did you put your cheesecake in a water bath by chance? It will ultimately be soft and likely a bit crumbly, but shouldn’t be soggy. 🙁

Followed this recipe to the T. Crust was extremely soggy. I think it should have been baked first

Hi Barb! That’s quite odd. Did it over-flow? Did you put all of the raspberry filling in? You do want to reserve some to serve on the side. I’ve never seen the raspberry part leak out. 🙁

Why would that have happened? The cake just giggled in the center when I opened the oven after the cooking time as you indicated. Will the cake set okay?

Hi Sue! I haven’t personally tried it. You will want to make sure the berries are broken down small enough. I do have a strawberry cheesecake that isn’t swirled, but is topped with loads of strawberry.

While I adore raspberry, most of my guests are looking for a strawberry swirl cheesecake.

Hi Phyllis! I don’t have a great way to add the white chocolate into this cheesecake, but you certainly melt some chocolate and drizzle it over the top when it’s done baking. 🙂

This cheesecake is the perfect texture! Rich without being overly dense. It is sweet enough to be eaten alone but the raspberry sauce is a beautifully tart complement. I’d make this again in a heartbeat – and make twice as much sauce for it!
