Made this for Thanksgiving and it was a huge hit! I thought it was the perfect ratio of crust-to filling, and people were more likely to take a small square than they were a whole slice of pie. (Even if they did go back for seconds 😉) The whole thing was super easy, and it’s now permanently replaced a more traditional pumpkin pie in this house. I was planning to use heavy coconut cream for the filling and the 2 tablespoons in the crust. I’m thinking that coconut flavor will be compatible with pumpkin. Any thoughts?

Hi Camille! If you don’t have one, it can be more of a struggle and you may wish to use the crust from my millionaire’s shortbread instead. We did test the recipe that way and it works quite well, though I do prefer the shortcrust listed instead.
