Oh my! I made these this morning for breakfast and they were so delectable! Fluffy and soft inside crispy edges. Perfect textures. I added chocolate chips walnuts and a few banana slices and topped with maple syrup! Highly recommend this for anyone who loves pumpkin pancakes

I made these delicious pumpkin pancakes for our breakfast dinner night, only thing I did different was bake them in the oven instead of flipping them in a pan on the stove.I put them in a 9×13 pan with butter greased parchment paper, then poured in the batter, baked at 350-F for 26 minutes. Much easier and they are all served hot at the same time, just square instead of round. My favorite time-saving way to make pancakes. Thanks for the awesome recipe Sam. πŸ™πŸ»πŸ’–πŸ€—

We’re so happy you enjoyed them, Natasha! Be careful about using the buttermilk–we actually found it makes the pancakes too dense and heavy. Also make sure you are very careful when mixing, as over-mixing can very quickly lead to dense results as well.

These pancakes are extremely flavorful and absolutely delicious! They are much denser and more filling than buttermilk pancakes due to the pumpkin, but I’m not sure you can get around that without playing with the chemistry a bit. I may try Buttermilk vice whole milk next time, but overall, extremely happy and will definitely be serving these in the Fall/Winter holiday months. I would even consider making them as a desert alternative. A little butter and real maple syrup makes them a perfect sweet treat, not just for breakfast.

This recipe was amazing!!! Delicious and so easy!
I have never eaten anything this fluffy before!

(I also made some pieces with chocolate chips and they elevated it perfectly.
Sadly I didn’t have any maple syrup at home, will try them with it sometime, but we just got gifted some chestnut cream and it was the perfect spread on it)

I did half white flour and half whole wheat flour, and also Pumpkin Pie Spice instead of Allspice (using the same measurements for all), and it turned out great!

We are a pumpkin pancake all-year-round type of family. I make them frequently on weekends. We have a few favorite recipes we go back to (never before commented on any recipes) and today decided to try yours. We love them! It’s become our new fav. The pancakes have great flavor, are thick without being dense, not too sweet, and have this nice little crunch on the outside edge. Recipe bookmarked.

Hi Andrea! That is frustrating! I would think it may be the home-canned pumpkin, I have used generic 100% pumpkin puree (shown in the photo in the post) and Libby’s with success, and yes it is quite thick.

I double checked all my measurements- they were correct- so I cooked them up anyway. They were very thin and not fluffy at all like yours. I’m no stranger to making pancakes (or baking in general), but I’m stumped why they’re so thin. Would home-canned pumpkin have anything to do with it? I strain it well before mashing it, but I know many commercial ones are very thick. What type do you use? I’m guessing store bought from the description?
