while reading though it says to add all 4 tsp pumpkin pie spice to the butter but also mentions whisking in the pumpkin pie spice in with the flour? am I missing something?
should I split the pumpkin spice?
I assume it doesnt matter a whole lot but my OCD says otherwise.

So much less intimidating than I thought.. And so, so good! Ended up making another batch with dark chocolate as requested by mom but I definitely think the white chocolate are better.. I did increase the filling to 8oz cream cheese, 2 tbsp sour cream and 1/2 tsp vanilla to the same 1/4 cup sugar to utilize the entire block.. and still had a few unstuffed cookies in the end.

I definitely needed to use less cream cheese per cookie, my first batch was way too filled and there was a lot of dough left over so I made regular pumpkin cookies. It filled about 18 cookies. Other than that they’re great!

Hi Ness! That will work just fine. You can follow my instructions on how to freeze cookie dough. Just note that sometimes the cookies won’t spread quite as much when frozen, but personally I don’t find that to be an issue at all. 🙂

wow! Thank you for this recipe. These had me looking like a pro chef. So good! I left out the chocolate because I thought that would make them too sweet, but followed everything else exactly. I particularly liked them fresh out the oven after cooling. Do you think if I wanted to assemble the cookie (filling inside the ball of dough, rolled in the sugar cinnamon mix) then stored in the freezer so I could pop a couple at a time in the oven whenever I wanted or had company, it would turn out as good?

I doubled the recipe and it was pretty intense trying to mix all of the ingredients. I ended up using my hands to fold everything together. I did not use as much cream cheese inside of each cookie because it seemed intimidating to completely cover that much. They turned out beautifully!!!! My 10 year old daughter spotted the recipe and insisted that we make them for Thanksgiving….I am so glad that we did!! These are the best cookies that I have ever made!
