These bars are DELICIOUS and easy. I doubled the recipe and made two pans for a party. Ahh I want to eat these everyday! Thanks again, Sam!

One change I had to make — my batter seemed really dry (I think it’s the flour I use and because I used thawed and drained pumpkin, which made it much less wet than by just blotting fresh canned pumpkin). So, I did end up throwing in the egg whites. Such a rebel! It seemed to help a lot.

I had fresh orange infused craisins from a Cranberry Festival I went to this fall and decided to add some to these bars. I used 3/4C in the batter and 1/4C to the frosting. I do not make a habit of modifying recipes but this was an incredible flavor combination! I just love these bars. I did quite a bit of blotting for the pumpkin (I think 3 paper towels worth) and I wasn’t sure if I did too much as my batter was very thick. I think this is why my bars were definitely more cookie-like, meaning chewy, and I loved this!

I did as you suggested and added 1/4 tsp at a time. Added 1/2 tsp. total and it had a nice “boost” to the Pumpkin spice flavor. It was for my wife’s bunko group and was, as usual with your recipes, well recieved.

Hi Debra! Personally I would be comfortable letting them sit out for that amount of time. Adding more sugar to the frosting would make it sweeter but would help preserve the cream cheese in the icing even more if you are still worried, or you could always try one of my other frosting recipes. Just made these and quite tasty. Made your pumpkin spice first, just a little light on the measuring because we like milder flavors The bars went together quickly and used a vanilla buttercream frosting since cream cheese is not our cup of tea. Passed them around to neighbors so we two seniors wouldn’t be eating them for a week!
I enjoy your videos even tho’ I’ve been baking for 50+ years. As a senior I find the recipe easier to put together when I’ve watched you first!

I made these yesterday. I used fresh pumpkin, drained through cheese cloth overnight and fresh ginger. I thought the texture of the bar was great. I didn’t get a huge pumpkin flavor and I would probable add a little more pumpkin spice next time.

I made the frosting with 1 1/2 cups of powdered sugar and found it to be overly sweet. I ended up adding more cream cheese and stayed with the reduced sugar and it tasted great.

So amazing! I used arrowroot powder instead of cornstarch, but I made no other changes and they came out exactly how you described them. Our family of 4 ate them in one day!
I plan to make these for Thanksgiving dinner, but need to adapt it for a gluten-free eater. Any suggestions on how to make it gluten-free?
Also, I’d like to try adding chocolate chips and will let you know how those turn out.
