Swapping it for regular corn starch would make cookies drier, snappier. I add modified starch to cakes and cookies as a “cheat” when I’m baking with lower fat and sugar or when I want extra moistness. Also helps to keep the nice fresh texture for longer.

Found it in a Good Housekeeping magazine in 1980. It’s a never fail and very delicious cookie. I use this recipe also to make kitchen sink cookies and just add the other add ins.

Hi Lyndsey! That should work. I would just worry about making them too large as they are a rather soft cookie and could start to fall apart when picked up if made too big.
