Brown sugar layer way too skimpy for my taste. Also, 45 minutes bake time is too long. Disappointed. I followed recipe with no additions or changes.
I wanted to make a cake that did not use a box mix.

Most moms in the 50s made this cake as did mine. Making this was a way to go back in time. I followed the cake recipe exactly (so easy and no cake mix!). My only modification (a departure from the 50s) was to ditch the maraschino cherries, and use fresh sweet in-season cherries (pitted) instead. The juices from these cherries seeped into the cake for a nice effect.

I made this yesterday for my husband’s birthday and it turned out great! It was my second attempt at upside down pineapple cake from nearly 20 years ago. The first time was a delicious disaster. This time it came out perfectly. I mostly followed the recipe but made some changes. I forgot to pat the pineapples dry, added the brown sugar before the pineapples, and substituted leftover pineapple juice for the milk . Since it wasn’t a whole cup I added a bit of sour cream for over a cup of liquid ingredients to ensure the cake was moist and add fat. I adjusted temperature and cooking times for my convection oven and frequently checked on the cake until it was done. The cake came out perfect after 15 minutes of cooling time. We ate it still warm and everyone loved it

The recipe was good. The cake itself was a little dense, possibly because I hand-blended the butter and sugar and because of the altitude. Baking at 7,100 feet is challenging; nothing comes out perfect except for focaccia. I will definitely try it again with some adjustments.

Really, really wanted to love this recipe but I couldn’t quite get there. I think for 2 reasons:

1. The cake isn’t sweet or flavorful enough. I appreciate the intent of the cake being a base for the sweetness of the pineapple and brown sugar to jump off of, but I feel it holds them down. I wanted a bit more sweetness to the cake to accentuate the sweetness of the toppings.

2. Not a fan of covering the cake with foil while baking. One of my favorite parts of pineapple upside down cake is the caramelization of the pineapples and brown sugar. Even loose tenting with foil prevented this by keeping moisture in.
