I peeled and froze a summer crop of peaches, and I’m defrosting them to bake the peach crisp tomorrow. My question is, should I try and get rid of as much water (juice) as possible and should I add a little more flour?

It turned out great! So easy to make and requires so little time! What about adding pecans? Can I use any fruit to make this crisp? I’m thinking of cherries and maybe adding cherry liqueur. This is a 5-star peach crisp, but I think there’s a little room for improvement. First, the topping put up a fight. The cold butter pushed itself between the wires of the pastry cutter, making it ineffective. I switched to two knives, but the oats in the mixture kept that from working very well. I finally used the side of a fork to work it together and got it crumbly. However, I like the melted-butter topping of your apple crisp much better, because of the big chunks, so that is what I’ll use in the future.
I’m not a big fan of the vanilla in the peaches, either. Since bitter almonds are related to peaches, and almond extract tastes just like the seed inside a peach pit, 1/4 tsp of almond extract works better than vanilla, in my opinion.
With all that said, it’s still the best peach crisp I’ve ever had.
