Hi Timothy! The cocoa powder and the strawberry powder take the place of the cornstarch. πŸ™‚

Hi Ashley! That should work just fine. We have a post on how to freeze cookie dough that should be helpful for this πŸ™‚

Hi Sam! Do you think these would work with freezing the dough then baking later from frozen? I bake a lot for charity bake sales and don’t have much time to prepare dough fresh. I do it with many types of cookies and scones, but don’t have any recipes I use corn starch in. (Or even any like these in general). Thanks for any insight!

In reply to Sam Merritt.

Thank you for the correction Sam! The cookies still came out amazing somehow (though the chocolate dough was super hard to scoop). Perhaps the natural fat content in the cocoa balanced out the dryness. I will definitely make them again with the corrected cocoa weight. Thanks again.

I’m so sorry for the confusion, Katrina! The 38g was a typo. It should only be 18. πŸ™ I have updated the recipe to reflect the change. I hope you were still able to enjoy them. )

I’m so sorry for the confusion, Michelle! The recipe does have a typo. It should say 18g. I will make sure to update that. I hope you love the cookies! πŸ™‚

I am in the process of baking your recipe but ran into a small discrepancy with the coco powder measurements. you have 3 tablespoons or 38 grams and it looked like a bit much to me so I googled it and 3 tablespoons is only coming up to about 18 grams, and that actually makes sense in comparison to the freeze dried strawberries measurements. is that ab error?

I made the dough but the chocolate dough came out suuuper dry. I measured my ingredients by weight. Can you please confirm that 38 g = 3 tbsp cocoa is correct? I did use Dutch process but did not think it would make a huge difference. Thank you!

Fantastic recipe!! My whole family loved them. The soft, chewy texture is perfect. I personally am not a fan of Neapolitan ice cream, but I could eat a dozen of these cookies easily.

You could try adding different extracts, but I am wondering if they were slightly over-baked. The flavors should be pretty prominent in this cookie. It can also lose some flavor if there was a little too much flour added. πŸ™

Hi Sam! These were fun to make, however, my first batch came out with the strawberry coloring baked out. I turned down the oven 25Β°, and the 2nd batch looked a bit more like yours. They kept their puffiness but didn’t really look like scooped out ice cream, unfortunately. Still, they were nice, thick cookies! Next time I will utilize freeze-dried cherries or raspberries. The red coloring might be more established. Is there anything we can do to make the chocolate more chocolatey and the berry flavor more evident? Thank you so much!!

Hi Sherry! I use about 15g. When buying them I would just look for a package that’s a little more than 15g to make sure you have enough. πŸ™‚

Approximately how many ounces of the freeze dried strawberries does it take to get the 1/3 cup powder that is needed?

This was so much fun! I wish I could share a photo. I will on Pinterest. Next time, I’m going to try adding more vanilla and strawberry flavor. I wasn’t sure about the cake flour, but I’m glad I tried it.
