I made this recipe this weekend, and they were amazing! I would like to try to make them in a jumbo muffin pan. How long would you recommend that I bake them? I’ve made quite a few of your recipes, and I am never disappointed. Thank you!

Oh my goodness! Do not sleep on these muffins!
I made a single recipe of these muffins because I wasn’t sure if my girls (3 girls!) would like them but they were gone in a single day! Even my extremely picky 5 year old ate them up!
Next time I’ll be making at least a double batch. Another knock out of the park! Never doubt Sam, she knows what she’s about.

I would like to add chopped apple. Would I chop 1.5 cups, add a little cinnamon sugar, let sit, then drain and add apples to batter? Or add a teaspoon of apple mixture to the muffin batter after half filling the cupcake paper, then finish adding batter?
Do as bake as written?
I can smell it already.

I make your chocolate chip bakery muffins all the time. Is there a way to make the cinnamon ones to be just as tall and big as the chocolate chip ones?

In reply to Ann. Hi Ann! That will work fine. I would probably add about 1.5 cups but that may need to be tweaked a little bit. I would stir them in when the wet and dry ingredients are about halfway combined. :)

In reply to Jill. I just made these! I think I might have over mixed the batter a little, because they were a bit dense. But the taste was spot on, they're delicious! Not overly sweet, and the cinnamon is perfect. Will certainly make them again (and try not to over mix lol).

I’ve baked for decades but Sam is the first to add cornstarch, whites And whole eggs and resting the batter. OMG! Her muffins recipes impressed me so much I signed up for the newsletter and I’ve thrown my old “favorites” away. Such a simple change up in her recipes have changed my muffin baking world 😀
Texture is like a Twinkie, stays moist in the open air so a buffet addition hit.
I always follow to the letter when I make a new recipe the first time then make my changes but not this time. I’m going to make every recipe she’s got 😀
