Made this at end of summer with fresh corn. Then again just recently with frozen corn(no fresh available). wanted to do a lunch bowl, so added seasoned cubed chicken and rinsed drained black beans. It was amazing both times, and soon easy! thank you!!

Muy bueno! I’m an elote fan, granted, I don’t make it much. When I saw this recipe, I just knew I had to try it. Talk about delicious…my mom even said this was her new fave (over broccoli salad…gasp!)! This is so easy to make, and Sam is right…while this is delicious right away, letting those flavors meld for a while makes it amazing! Fresh, sweet corn is definitely key in this recipe. I will be making this again for a summer dinner party later this week! Yum! Thanks for another great, savory recipe Sam!

Winner winner, chicken and corn dinner!
I added some diced chicken marinated in taco seasoning and lime juice so it would be a complete meal. My 5 year old ate two bowls. My 7 year old ate a bowl and a half. My 3 year old ate his whole bowl. All three said it was delicious. Thanks for sharing!

I’ve made it now, and it is just as wonderful as I expected it to be. I used just a little more cotija, just because that’s how much I shredded. Everything else, I measured carefully, which is unusual for me. I only used 1 Tbl jalapeno, because I’m not sure how my family at the reunion feel about them, and I think it’s OK that way. The dressing by itself isn’t nearly as good as the broccoli salad dressing, even though they are similar, but that means nothing, because on the salad, it is just right. As I’ve said before, Sam is an expert at flavor, and her seasonings are always subtle and just right. I love the generous amount of dressing, because it makes a very creamy salad. The corn I got at my produce market was some of the sweetest I’ve ever tasted, and the butter browned while I was cooking the corn, which just added another dimension to the salad. It was difficult for me not to just eat the browned-butter corn by itself. It’s good that I had already announced what I was bringing.

Superb!!!! Have been thinking about this dish since it was first posted and it exceeded expectations. We charred the corn on the grill and used fresh squeezed lime juice and tho I’m sure it’s delicious either way, I would encourage you to take the time to do so and enjoy the freshness. Dressing ratio was perfect. Cant wait to serve to company.

I made this for our monthly potluck at our Church. I was a bit dissapointed to ser that almost no one tried it. But I liked this salad a lot, and ate almost all at home. Hi Elizabeth! It’s often compared to sour cream, but Mexican crema is thinner and has a milder, slightly sweeter taste than sour cream. It has a little higher fat content as well. It’s often found in the dairy section, near the sour cream. šŸ™‚

I couldn’t wait to try this and it was wonderful! I don’t like shucking corn but our grocery typically sells some ears already cleaned. I used 4 ears and did everything exactly as instructed and used elbow macaroni. All of these fresh ingredients were a taste sensation! We ate on it twice then I added a bit more mayo since the pasta absorbed some. I’ll be finishing it tonight for a light dinner. Superb!
