Hi Lori! There’s no lemon juice here, because it doesn’t really add much flavor. Your flavor will come from the zest. The lemon extract just adds an extra punch to the lemon flavor. ๐Ÿ™‚

This cake is sooooo yummy! It is moist and so pretty…my hubby grabbed a slice and ran into the garage to work and ran back inside a minute later and gave me a kiss and said…this cake is soooo delicious! I WILL be making this on repeat for the summer….

I made this with 1:1 gluten free flour and it turned out great. Maybe slightly more dense than normal, but my kids demolished both loaves in just a few days! King Arthur GF 1:1 or Bob’s Red Mill (the blue bag) have both worked great for me with no other changes.

Excellent recipe; moist and delicious. I had lemon paste that I used in place of the lemon extract and it gave a nice depth to the lemon flavor. My daughter thinks this is the cake she’ll request for her birthday from now on.
