These cookies had a nice flavor but were a little stodgy. If I made them again I would reduce the flour by 1/2 cup to try to get a better texture.

We try to be sugar-free here so I used Lakanto Monkfruit with Eurythrol. The dough was super hard to work with – it kept crumbling, I ended up using a scoop to shape my cookies, but it was challenging because it was too dry,. i ;packed the dough into the scoop. I had to cook them for about 17 minutes. The cookies tasted great and were nice and crunchy. Can you suggest another adjustment to make the dough a bit easier to work with and make the cookies a little moister? Thanks.

Hi Charlotte! I haven’t tried chia seeds, but I would think it could work. I would not recommend skipping the chilling time or your cookies could spread a lot more than desired.

This is by far the best lemon cookie recipe i have ever made. I don’t say this lightly. Literally will never make any other. Natural lemon flavor, sweet but not overly sweet, and they cook up so delicate tasting while keeping their perfectly round shape. Hands down there is no better recipe.
