Made this on the weekend for my daughterโ€™s birthday instead of a traditional birthday cake. She absolutely loved it, and everyone else did too. Simply delicious and with a little dollop of homemade whipping cream on top adds that final touch of perfection. Sam, you have done it again, thank you so much for all of your amazing recipes.

Oh my goodness this is AMAZING. I made it for Easter and my family LOVED IT. I like key lime pie but sometimes can be a bit tart. Key lime in cheesecake form takes away the super tartness. 100 percent will make again!

Hi Samantha! The cheesecake would definitely be much thinner, but too thin is really a personal preference. The thickness would be reduced by about 25% if that helps. ๐Ÿ™‚

Hi Quinn! It can be difficult to find key limes and I’m not a big fan of the texture it adds. You can certainly add some on top. I don’t use vanilla because it takes away from the key lime flavor. ๐Ÿ™‚

Wonderful recipe! This was a huge hit at my house, everyone loved it! This has the perfect key lime taste. I usually don’t like cheesecake that much because most cheesecakes seem overly sweet, but this one isn’t! The same with your lemon cheesecake which I made a while ago, the lemon and lime juice really help balance the sugar! Thank you, Sam!

I’m going to make this cheesecake and want to know if I increase the fresh lime juice from 1/2C to 3/4C for the curd will that change the texture/consistency or throw off the balance? I recently made a key lime pie that called for 3/4C fresh lime juice, 28-oz sweetened condensed milk and 1C plain greek yogurt; I loved the taste which was very limey and tangy, just the way I liked it. So please advise your thoughts on the lime juice increase as I want this to come out perfect for Mother’s Day. TY!
