Thank you for this recipe! I make it every holiday season. These cookies have the best crisp edges with a slightly chewy center. My favorite thing about these is how flexible I can be with additions. I usually split a batch into several bowls & make each different. Lime zest is terrific, as is chocolate/cherry/walnut!

Wow! We made 4 batches of these yesterday for a bake sale and they are DELICIOUS! Super cute with the sprinkles around the edges. We have some frosted and decorated and some without. Perfectly delicious both ways. Will definitely make again and pop a roll in the freezer.

I’m currently recipe testing for Christmas baking and this recipe is my FAVOURITE version of slice and bake cookies here on Sugar Spun Run. The fat:sugar:flour proportion makes for a deliciously tender butter cookie, and you can easily add a teaspoon of cornstarch if making a few days ahead of time to keep their texture! If measured properly, using a scale, the dough will probably be just slightly too soft to shape and roll in sprinkles/sparkling sugar right away, so I roughly form it into a log and wrap the plastic wrap/waxed paper wrapped in towels like instructed. (I much prefer the towel method than the paper towel roll btw, I actually use a bath towel for extra plush protection, and I can roll both logs up in the same towel.) Then an hour into the chilling time I go in and refine the log shape and roll it in any coatings I’d like. This gives the dough enough time for the butter to slightly set up, but it’s still plenty tacky to adhere the sprinkles/sugar. Then I rewrap and let it do the final amount of time. It’s absolutely worth the extra little bit of work- they’re the cleanest I’ve ever gotten a slice and bake cookie to come out while actually having delicious flavor and the perfect texture. I watch the size and adjust the baking time based on how wide I made the log, and it hasn’t failed me yet. Highly recommend!

It looks the same but I donโ€™t remember there being an egg in the recipeโ€ฆ Iโ€™m almost certain of this. I made these cookies for a Memorial Day bake sale. They were so yummy! I used red, white and blue nonpareils to decorate the edges. I made four logs of dough instead of the two because it was easier to roll out and to get the nonpareils to stick on a smaller surface area. I wrapped the cookies in a bag and tied it with a patriotic ribbon. These cookies tasted good right out of the oven, but they tasted even better the next day. I remember making icebox cookies for 4-H growing up but I don’t remember them tasting this good.
