Hi Lola! This should work just fine as cupcakes. I would bake them on the same temperature for around 17-19 minutes, but you will want to keep an eye on them. πŸ™‚

To me it did not taste like the classic hummingbird. Cannot believe I am saying this because I look for things that are not so sweet, but it wasn’t sweet enough? I am sure with the frosting it would be, but I like to eat cake without frosting. I feel like a cake recipe should be able to stand alone and the frosting be the literal “icing on the cake”. I didn’t feel that way about this one though

As a 30-year baker I went back through and made some addendums.
I didn’t think there was much flavor here.
My bananas were ripe and I went according to your directions.
On my second attempt I added two teaspoons of banana extract.
I added add two cups of golden raisins chopped.(if you’re golden raisins are too hard soak them and boiling water for 15 minutes and drain them) I did two cips of ground walnuts.
Pecans are too hard and walnuts have a more buttery flavor.
I also doubled the vanilla and used dark brown sugar to give it a beautiful color and a little bit more of a caramel undertone from the extra molasses.
It came out perfect, The recipe is wonderful as far as the consistency of the cake so I applaud you, it was very moist.
I didn’t find it had flavor I just found it was very sweet and with these changes I was very happy with it.
