Wow! This recipe came out great and is now THE recipe I use for making granola. I love the flavors of the cinnamon and vanilla that standout nicely and the clumps that you get when breaking it up after it cools. I followed the recipe as written with 2 additions. For the oil I used Coconut Oil and added 1 cup of Bob’s Red Mill Unsweetened Coconut Flakes and 1/2 cup of whole raw cashews.

The egg white is essential for helping make this granola recipe crisp and helping it bind together into those gorgeous, munch-able clusters. So I’m not sure I would recommend omitting the egg white. πŸ™

Also the whole almonds for sliced, as said this is a very versatile recipe. I love and appreciate all your recipes Sam! Keep up the great work!
