I have been waiting two years for the sugar ban to be lifted so I can bake for my grandson, and the time is here! My daughter has asked for a gingerbread cake. I will need a 9” round and a 9” square pan to form a number 2 cake. Should I double the recipe and make some cupcakes with the extra? I feel a single recipe will result in a thin cake. Thnx!

Hi Amy! I am not seeing this discrepancy on my end, could you tell me where you’re seeing 1 teaspoon of cinnamon called for? The cake calls for 1 Tablespoon of ground cinnamon. Let me know if I’m missing something, I’d like to get it fixed but I don’t see an error on my end.

I made this cake for my daughter and husband’s shared birthday cake this year. My daughter asked for a gingerbread cake with cream cheese frosting, and this one was perfect! They are already asking for this cake next year. I used the weight measurements and it was perfect. The cake is so moist and the spices are perfectly balanced. I was intrigued by the original frosting recipe that used a Tbsp of bourbon so I used less milk/ cream to add this in. I appreciated the feedback and comments on this recipe to help me make this adjustment (usually the first time I try any recipe I don’t make any adjustments). I made slightly more frosting so I could frost around the sides, but it probably wasn’t necessary as I had about 4-6 oz leftover. We are thinking about making cinnamon buns and using this frosting on top…

Hey Sam! I made this yesterday for my birthday and it was fantastic! It was so ghod, I am thinking of making it again today for my friend’s birthday tomorrow. However, she’s sensitive to gluten and I am new to baking so I was wondering if using gluten free flour would work in this recipe.

I made this for my birthday.. it was lovely. I made a whipped white chocolate ganache with just a little cookie butter for the filling, it was so light and complimented the gingerbread perfect. I did make your brown sugar cream cheese frosting as well and it was delicious. next time I might try a brown sugar ermine frosting with it! thanks for great recipes Sam!

This was so easy and delicious! I was almost sure that I messed it up when I had to run to the store and get more molasses while the rest of the batter was already made, but it turned out great. Perfect amount of icing as well, though I could have done with dark brown sugar and more of it. Definitely making this again!

This was so delicious! The gingerbread flavor was excellent. One thing I would change is add the brown sugar to the butter and oil and combine before adding to the dry ingredients. I added the sugar in with the flour and spices per the recipe and ended up with some brown sugar lumps in the finished batter. Also, mine were fully cooked at 20 minutes (maybe just my oven but be sure to keep a close eye on them!)
