I’m looking to make a dark, as close to black gingerbread as I can for a themed house, and the methods I’ve found for that call for blackstrap, dark brown sugar, and some dark cocoa powder. Is it just the color you don’t like, or is there another reason it doesn’t work with your recipe?

Hi Jazz! If you mixed it as indicated (it needs to be mixed well with an electric mixer at minimum) and it was still crumbly it does sound like you may have accidentally measured out too much flour so reducing it (assuming you aren’t using a scale) sounds like a good idea.

Mine was also very crumbly! Kept cracking when I tried to roll it. Iโ€™m trying to remake it and cut 1/2 to 1/4 cup of flour; letโ€™s see how that goes!

Made this recipe a number of times. One year, I doubled the recipe and had way too much – I kept it in the freezer for a whole year! Still turned out amazing ๐Ÿ˜‰ fun tip: if it puffs up, use a microplane to shave the sides down to keep them level.

im a huge baker. I missed placed my ginger house recipes. tried to use this one and it is horrible. followed instructions to t. even did it a second time to make sure. dough does not come together. I added two extra eggs to hold it together. baking now and it all bubbly. trash this recipe

You really need to keep mixing and add the dough more slowly. The dough in the video is made with the measurements listed.
