Perhaps, flattening the extra dough just a little bit before baking to achieve a baked center?

These are a big cookie, but they aren’t supposed to be super fat. You could try adding a couple tablespoons of cornstarch to make them a little thicker and not spread as much.

Not completely flat and thin, but I would like them to be a bit more fluffy, perhaps 5mm thick, but they are about 3mm.
You think, cooling the dough for a bit longer might help.

They will flatten a little bit out of the oven. Once out of the heat the puff deflates a little bit. Are they going completely flat and thin?

Just made the cookies. They turned out Wonderful. Only change I made, I used 1 cup light brown sugar and 3/4 cup dark brown.

I sent him with a couple dozen (a workout to mix) packaged in eat now & freeze containers for homesick days. Instead he walked around on move in weekend handing them out!
