I had to make dessert for tonight’s dinner party. I hit Google with ingredients I had on hand (blueberries, strawberries, and a peaches.)
I found your recipe and used it except instead of making your dough, I used puff pastry.

Stellar crust recipe! It was crispy, crunchy and buttery good. We loved the pie I made with fresh peaches and diced stem ginger for added zing. I added extra corn starch as the peaches were really juicy. Thanks for posting such a good galette recipe.

I cut this recipe in half and it still worked! I had some blue plums that I wasn’t getting to and they made a delicious and colourful filling. I did the crust by hand (didn’t want to bother with the food processor for a small amount) and it worked well. I had a bit of leakage of the filling so losened the crust from the pan with a spatula when it came out and all was well. Will try the full recipe when I have a bigger crowd and will experiment with other fruits. Really fun to make!

Made this for my hubby yesterday. I rolled the dough out directly on my parchment paper and just slid that on my baking pan. I used peaches and your recommended 2 TBL cornstarch. The sugar sprinkled on top was delightful and gave the crust a slightly sweet crispness. There was some juice seepage so I was glad I baked it on a rimmed baking sheet. Hubby loved it. Thank you for teaching this grandma how to make her first galette.

The dough does need to chill for at least a half an hour, but longer will be fine. You may need to let it warm up a little bit before rolling it out if you leave it in the refrigerator for more than 30 minutes. πŸ™‚
