Quick and easy recipe. Loved the way it turned out. One simple suggestion that will enhance the flavor of the soup. If you can get your hands on them, pink peppercorns instead of black pepper.

This soup is delicious and the secret ingredient made a big difference!
I used tomatoes I had frozen last summer and my dried basil. I garnished with a dollop of sour cream and croutons.

I had some tomatoes on the counter that I needed to use so I googled tomato soup recipes and this one came up. I made it with slight variations so I didn’t have to go to the store. It is amazing! I think roasting the tomatoes and onions really makes it! I’d never done that before.
My variations: dried basil and thyme instead of fresh, half and half instead of heavy cream, and I added two dashes of red pepper flakes.
I will definitely make this again!

Thank you so much for the recipe and your video and excellent instructions. The soup was delicious.!!!! The only thing I did differently was strain the soup as my tomatoes had a lot of seeds in them.

I made this soup and used tomatoes from the garden roasted full garlic cloves and added a red bell pepper. I minced garlic and used vegetable broth instead of chicken . I used an immersion blender and this was my first homemade tomato basil soup. It was so good! Thank you for this recipe.

In reply to Fran. I'm glad you ultimately enjoyed it, Fran! What kind of tomatoes did you use? Certain tomatoes can make it a bit thinner. You can always simmer it on the stove top until you reach the desired consistency. :)

DELiciousioso Mama Mia! I was lazy and put the minced garlic in with tomatoes and onions to roast. Used the Tomatoes I had from neighbors, family and local vegetable stand (always fresh & good here in northern IL). A mix of about 4 different types and my basil was on its last leg of the season (Labor Day). Also used Heavy Whipping Cream (unwrapped) left over from a recent cake bake. Topped it off with yummy croutons freshly made from Chibatta, olive oil and fresh garlic – toasted 10 min 350 in oven. Best Dinner all week – oops – had to add an ear of sweet corn.
