I’ve made this a few times and absolutely love it! I’m wondering, can you freeze the dough already rolled in balls? Before you put topping on of course! Just the cookie dough itself pre rolled into balls! Thank you!

I used individual cellophane bags from Amazon once they had set so I could stack them in a Tupperware and it worked well.

Hi Denise! The butter bits on top will crust like a firmer buttercream, they may get a little smashed down, but personally I would do it and just separate the layers with wax paper. πŸ™‚

To Sam: I’m always excited to try a new cookie recipe, especially yours. These are wonderful!

To other bakers: As is, this recipe is more like coffee cake than French toast. Next time I’ll add more maple and cinnamon. At first I thought the dough would be too soft, but it was just right after an hour in the fridge. 3 tablespoons might seem like too much for one cookie, but they baked up perfectly in 13 minutes and are a nice decadent size. The ‘butter’ is a delightful touch and is worth the extra dishes. I cut the recipe in half and got about a dozen cookies.
