The hot coffee blooms the cocoa when it’s in the mixture. I do it this way to make sure everything is evenly mixed. I suppose you could put the cocoa in the coffee.

It was the first time I ever had perfect cupcakes and you have turned my hate for baking into a love! Since making the first time I can’t seem to get them to be rounded on the top. They are either flat or sunken. I don’t over fill like you said, I do t open the oven while cooking only to check at 17 minutes if they are done, eggs are room temperature. I can’t seem to trouble shoot the problem. Same for the vanilla too!

Hi Tina! We haven’t tried saving the batter so we’re not sure how it would do the next day. Your students could always bake the cupcakes one day and then frost them the next. Hope that helps!

Thank you! I suspect it might be the first possibility. I’m always so hesitant to overbake that this time I might have underbaked. Now that i think about it, they also turned out a bit caved in in the centre. I baked them in mini (cupcake-sized) loaf pans rather than a muffin tin, which I knew would change the baking time. I think I over-adjusted. Thank you!!

I use them a lot (including cupcakes) and they always work beautifully! so this isn’t a criticism, it’s a legitimate question. These cupcakes turned out kind of gummy for me. Do you know what I might have done wrong? I’m certain it’s not a problem with the recipe itself. I must have fudged something (no pun intended) but I don’t know what it might be. What baking mistake might result in sticky cupcakes?
