I can see why it is one of your favorite cakes! I made it in individual tins and it all worked out perfectly. I froze them and then put them in a mailing box and off to go !!

Hi Jennifer! You shouldn’t have any issues freezing this filling. I’m not sure that freezing the ganache will work well though.

I have a trick for shortening the waiting time, without risk of developing a skin on the roux: Immediately after it reaches the right level of thickness, move it to the bowl of a stand mixer fitted with a whisk and beat it at high speed until room temperature (10-15 minutes). Then beat in the softened butter a bit at a time and the vanilla. Voila!

I love this as a going-away cake when female coworkers leave, if they get the joke about the witch being dead! 😀

Hi Connie! A 16 x 22 is a really big pan! Is that a 2 or 3 inch deep pan or just like a cookie sheet pan? Either way you are probably going to need to at least triple the recipe. This cake as it is will fill a 9 x 13. I’m also not sure how the filling will hold up under a cake that large.

Hi Laura! This frosting does have to thicken a little bit before it will stay on the cake, but I can’t say for sure how piping it would go. It may not be firm enough to pipe. I just haven’t tried it. If you do try it let me know how it goes.

IT TASTES JUST LIKE A DING DONG!! I couldn’t believe how tasty this was! This was my first time making a layered cake and making a chocolate ganache. I followed the recipe exactly & it came out WONDERFUL!! Sam’s recipes are always so good, they why I love using her recipes!!
This was a very special dessert that impressed my friends and family. I’d say this cake could feed at least 10-12 people. A little slice goes a long way… it’s very rich just like a ding dong! There were no leftovers, my family devoured this cake in days. When pulling the cake out of the fridge, let it set for 5 minutes before you eat it. Make this cake, you won’t regret it!!
