Hi Katie! I’m not sure how how cooking this in a slow cooker would work. Making the roux in the beginning is important for the final consistency of the creamed corn.

The slight variations were: small diced jalapeño instead of green onions. A dash of lime juice and zest and a bit of Parmesan mixed in. I’ve made it a few times a year since. It’s a winner!
