In reply to Beth. Hi Beth! You don't have to blanch it and it normally thaws pretty quickly so I just throw it in. If it's really frosty you may want to thaw it first. :)

I was just thinking that some sliced fresh basil might be a good substitute for the cilantro. Just be careful since it can be very strong. You’ll have to experiment with the amount.

Hi there! I’m one of those people that cilantro tastes like dawn dish detergent. Can I leave it out of this recipe or will that affect the overall flavor of the recipe?

Excellent summer salad. My husband loved it too and he normally does not like corn salad. We don’t like jalapenos so I omitted that. Everything I have made from Sam’s recipes have been amazing. Keep them coming!
