You could try another soft, sweet cheese like marscapone that has less tang to it.

Hi Cathy! You shouldn’t need to spray your pan, unless your pan isn’t a non-stick pan. I say prepared pan, because you’ve added the crust to the pan already. 🙂

Hi Ann! I would suspect it would probably stick to the cupcake liners. It may work if you use foil liners, but I’m not really sure. it is a pretty soft pie.

Hi Krystal! It’s rich, but I don’t think too sweet. It kind of like a no bake chocolate cheesecake. I actually buy a jar of instant coffee because I’m not really a coffee drinker either. It just looks like bigger coffee grounds. Espresso powder is a little stronger so you’d want to use a little less if that’s that route you want to take. 🙂
