Sorry I am just seeing this! The wafers may have caused an issue. For the bar, if it’s heated too much this can happen. I really recommend doing the double boiler method to get the best results. šŸ™‚

Oh boy, I had such trouble with the dipped pretzels…I used Ghiarardelli melting wafers (vanilla) and also another batch with Ghiarardelli solid white bars and melted them in the microwave with a small amount of coconut oil. I could only dip a few pretzels before the chocolate mixture would “seize” up and become like cement. I would reheat it for a few moments and get another few pretzels done, but it was pretty time consuming. Did I do something wrong? Your instructions don’t mention needing to keep reheating the chocolate mix…

Hi Sam!
I made these today with pretzel rods and it was the BEST experience I have ever had making them. The chocolate was a dream- perfectly smooth and easy to dip. I used 4 bars pf Ghirardelli 60% Cacao plus one bar of Ghirardelli semisweet chocolate. It made 45 pretzel rods plus a little ramekin leftover. Everyone loves these. Thank You for your food science research and insight that made these better than ever!
