Hi Kristen! Yes, it does sound like your buttermilk was too cold. You should be fine to bake the cake, but you will have the best results if your ingredients are all at the same temperature. Hope that helps!

I creamed my butter and sugar, then added my egg and vanilla. All seemed OK. But when I added my buttermilk, everything curdled (or separated?). This happened twice after attempting to cream my butter and sugar “better” by watching multiple videos about how to do it well. The only thing I can think of is that my buttermilk was too cold. Could that cause the separation? And when that happens can you still bake it that way or do you need to start all over again? Thanks!

I haven’t tried this one in a 3 layer cake. I did base this recipe off of my chantilly cake, which makes three layers. You could use that cake and stir in chocolate chips. 🙂

It’s so easy and such a crowd pleaser! I halve the recipe and use three thin, 6” pans and it’s perfect for a small family gathering. This year I’m going to try swapping whipped cream for buttercream icing to make it a little lighter.

Hi Andrea! I have not tried this as cupcakes so I don’t know exactly how it would turn out. You could add chocolate chips to my vanilla cake and bake it as cupcakes. I think that would work just fine. 🙂

You could use toothpicks, or foil. I find that foil doesn’t really sag into the top of the cake.

Do you put toothpicks here and there so the saran doesn’t touch the frosting? I have a 9×13 pan with a cover but no cover for my 10×15. Should i just use my 9×13? Thoughts? And i would plan to put in the fridge at the end of day 1 because of the frosting i would be using; would it still be good day 2 after letting pieces get to room temp? Thanks!
