This is really going to be a personal decision. Honestly if there was other food I would probably just make enough for 60. You’ll need 10 times the recipe and you’ll have to do it in batches. It’s going to take quite a bit of time. The math will also be pretty simple if you just do it 10 times larger.

If there are only 60 people coming, I probably wouldn’t make it for 100. That will be a lot of extra soup, unless of course you have big soup eaters. ๐Ÿ™‚

Hi Vicki! This typically serves about 6 so you would need to increase the recipe by about 20x. That’s going to be a lot of soup! You’ll need a really big pot!

This was awesome. I substituted frozen broccoli that I chopped up in the food processor instead of mixed veggies and it was terrific. Seasoning was spot on and easy to make.

Hi Sam! Iโ€™m a big fan of your recipes โ€” I always choose yours because theyโ€™re simple, well-explained, and they always come out great. I made this soup today but kept it vegetarian by using vegetable broth instead of chicken broth and swapping the chicken for tofu. I added a little extra spice, and it came out delicious. This was the most amazing soup I’ve ever made, and I make a lot of homemade soup! I never buy rotisserie chicken, so I cooked 4 chicken breast’s in 6 cups low sodium broth with Penzey’s poultry seasoning. I used what I had in full fat milk, which was about 2 1/2 cups. My broth ended up just over 4 cups. I decided I wanted a thicker soup, so I used 1/2 cup flour over my onions. My mixed veggies were carrots and peas, so I didn’t use fresh carrots. I messed up, adding the milk to flour mixture, but I don’t think it made a difference…lol For seasoning, because I used the poultry seasoning, I used a little salt, a lot pepper (we love pepper around here), smoked paprika (all I have), dried mustard and I added dried rosemary. I always use rosemary in chicken soups. This was outstanding! Yesterday I made cream biscuits to go with it. There’s 1 bowl left for us to fight over. It was a huge hit with everyone! I’m definitely putting this in rotation!

I have made this recipe several times and we love it! Due to cholesterol issues, I did a few substitutions. I use olive oil instead of butter and soy milk instead of the real thing. I also use parsnips instead of carrots, 3 or 4 stalks of celery, added with the onion and just 1/2 pound of white meat chicken. I like that it doesn’t make a huge pot of soup you are eating forever.
