As promised last week, I'm sharing my brand new recipe for sourdough tortillas! It's very similar to the flour tortilla recipe I just shared, but today's version has a deeper, subtly tangy flavor thanks to the sourdough discard.

Don't let the name fool you; sourdough discard does NOT need to be discarded! Okay, yes, you do need to pour it off before feeding your starter, but don't throw it away! Instead, stir it right into one of my many sourdough discard recipes. It still has some of the nutritional benefits, and even better, it can impart a wonderful flavor into some of your favorite foods.

Is this sourdough coffee cake my new favorite coffee cake? For now...until I come up with my next one (see also my pumpkin coffee cake, blueberry coffee cake, banana coffee cake--the list is always growing!). Today's version has a lovely depth of flavor thanks to the sourdough, isn't too sweet, and has an abundant, perfectly spiced crumb. I mean, just look at it! You need to try this one.

Nothing too complicated for you today, just a simple recipe for crisp and fluffy sourdough waffles! These are the ultimate brunch or breakfast treat--super thick, soft interiors, and perfectly crisp and golden exteriors. A full cup of sourdough discard adds a slight tang and depth of flavor that just takes these over the top.

They have everything you'd want in your pumpkin muffins: super tender and moist texture, robust pumpkin flavor, and enough sugar and spice to keep things interesting. I just love them!

This recipe incorporates sourdough discard into a rich banana muffin batter for a melt-in-your mouth, incredibly flavorful experience. They may look modest, but the taste is amazing and truly straight out of a bakery!

Today's sourdough oatmeal cookies were adapted from my classic oatmeal cookies. We had to make some slight adjustments to account for the liquid in the sourdough discard; these included eliminating the egg whites and browning the butter, which cooks out the water AND imparts a rich, toffee-esque flavor. YUM!

I'm so excited to add another sourdough recipe to my repertoire, and just in time for your Thanksgiving pie baking too! Today's sourdough pie crust incorporates sourdough discard (or starter, see my notes below) into pie dough for an incredibly flavorful, flaky crust.
