Cosmic cookies have been trending on social media for a few years now, and it's high time I share my version! The base is the same chewy, brownie-style cookie that I've used on several of my gourmet cookies, including my buckeye cookies and dirt cookies. It’s a nice and thick base that works well with different toppings, and today we’re using the fudge frosting from my cosmic brownies!

These carrot cake cookies are one of my favorite cookies, even if they are made with vegetables. Just like my carrot cake cheesecake, I think a lot of my love for them has to do with the cream cheese frosting piled on top!
