Oh boy was I a hit at the birthday gathering with these cookies – certainly a standout next to the usual stuff. Everything came together perfectly using your recipe exactly as given (I know you put a ton of effort into getting it Just Right). I had 20 cream cheese balls but extra chocolate dough so five of them didn’t have the innards but that didn’t determine their fans. Thank you!

Another amazing recipe! I might actually prefer these without the cheesecake, the chocolate cookie base is just so amazingly good all by itself! And as per a friend’s request I am going to try to make a chocolate-espresso cookie using this base. Thank you for always making the best most infallible recipes on the internet!

In reply to J. Without the cream cheese filling they can be stored at room temperature for 3-5 days in an air tight container. :)

In reply to Sam Merritt. if I use the dough base but skip the cream cheese and made a blake bottom cookie no cream cheese can that stor at room temp for longer!

I have an almost full can of Guittard Red Dutch process cocoa powder could I use that or is it best to use the plain cocoa powder?

That looks like some super high quality vanilla that you’re using! One day soon, I’m going to use your technique and make my own vanilla. I’ve never cooked with the real thing, so that should be interesting.
