excellent recipe. i ended up with 10g short of bananas but that didn’t make a difference. i was able to fill 14 liners and baked them in two pans (alternating wells to give them space and dome). the cakes domed nicely and i think if i planned correctly and didn’t overfill, i probably could do 15! i baked my cakes for 24 min (probably because the cakes were so big). i frosted with HALF of the browned butter recipe and it was more than sufficient. the frosting was delish!

I’m so sorry to hear this happened! What kind of oil did you use? You want to use a neutral cooking oil. 1/4 cup shouldn’t make these taste like oil. ๐Ÿ™

I followed your recipe, except adding chopped pecans to the batter. They are so light and fluffy (I donโ€™t like dense cupcakes). I used mini muffin pans. The recipe made 7 dozen, and baked in 10 minutes. They are so good! Your recipes never fail. Thank you.

I tried this recipe and almost followed it to a T (except I added chocolate chunks to 4/12 muffins and used dark brown sugar because thatโ€™s all that I had on hand). This recipe is a HIT. Very moist, perfect balance of sweetness and banana. My daughter said that they were EXCELLENT and would like them for her 6th bday.

I still need to make these cupcakes, but what I plan on doing for mine is drizzling a salted caramel sauce on the top to just give a little bit of a different flavor. But I use the sugar spun run recipe for the carrot cake cupcakes and LOVE them without any frosting, myself. I am very particular about the treats I make, so seeing what you wrote really fills me with confidence about these.

These are excellent and a great way to not waste 3 overripe bananas. ! I am so grateful that you include weights in your recipes.
My batch made 15 cupcakes. I only had room in the oven for 12 so the last 3 sat patiently on the counter for 17 minutes. Curiously, those last 3 had a nicer dome.
Nevertheless, all were delicious. thanks and keep those recipes coming!

Hi. I mostly made this cupcake recipe, but couldnโ€™t help tweaking it to half all quantities, and including ingredients I had on hand that I wanted to use.
I added one teaspoon of cinnamon, one teaspoon of orange zest, and instead of buttermilk I mixed half and half raw yoghurt and orange juice.
I was skeptical of the method – I typically cream butter and sugar – but tried it you way. It was so quick and easy I was nervous they wouldnโ€™t turn out.
The mix made exactly 12 cupcakes. And turn out they did! They are light, fluffy, moist, and flavoursome. Delicious cupcakes. Thank you
