Hi there Sam, thanks for your reply. I live in Canada and for the life of me, I haven’t been able to find full fat (3.25%) buttermilk in my city. 1% buttermilk is the most commonly sold product in grocery stores in Canada, so that’s what I’ll have to use. As an amateur/novice and home/casual baker, I’m not brave enough to experiment with making homemade full fat buttermilk. 🫣😂 I’ll give the 1% a try and post about the outcome.

Hi Tolu! I personally use a full fat buttermilk, not a low fat. The brand that’s readily available to me is “marburger”. I hope that helps! 🙂

Yes, 425 for 8 minutes, then 350 for 8 minutes. Did not open the oven. And I’ve checked my oven temp, its accurate. They looked ok, but when I tried to take them out of the pan, I could tell they were still wet, but them back in for another 3 minutes, but it did not dry them out enough to serve. Ended up throwing them out ☹️

Hi Pam! I’m so sorry to hear this! I just want to check that you baked these at 425 for 8 minutes, then reduced the temperature, not opening the oven, and left them bake for another 7-8 minutes? Was your oven fully preheated? 15 minutes is pretty standard for a muffin. 🙁

Usually the recipes on this site are great. This one is a total miss. Followed recipe exactly in terms of oven temperature and time for 12 muffins and they were completely raw inside. Only sub I made was making buttermilk made from milk and vinegar because I did not have real buttermilk on hand. Will NOT be making these again.

they tasted amazing, they were like a chocolate chip cookie, but super fluffy. So basically picture a super fluffy chocolate chip cookie. Also what makes them amazing is that they have a crunchy top, which just makes them even more amazing. I would totally recommend these, and I will definitely be makeing these again.

Just an update on my recent experience trying this recipe!! It turns out that my little 17 mo grandson doesn’t care for chocolate. But he loved the muffin part!! So I substituted 2 cups of blueberries instead and they were a hit!! Thought I’d share this variation for anyone who can’t have chocolate. I mashed 1/2 cup and mixed it in before folding the remainder 11/2 cups of whole berries. So good!!
